2021 Paul Lato Pinot Noir, "Seabiscuit", Zotovich Vineyard
"Lighter ruby-hued, the 2021 Pinot Noir Seabiscuit Zotovich Vineyard comes from a great site in the Sta. Rita Hills and was destemmed and raised in new French oak. Wild strawberries, raspberries, rose petals, baking spices, and loamy soil notes all define the aromatics, and it's medium to full-bodied, with a pure, layered, incredibly elegant mouthfeel and fine-grained tannins. It will evolve for 10-12 years, although it's fabulous today as well. (Drink between 2023-2035)" -Jeb Dunnuck, 96JD
One of Santa Barbara County's most storied producers, for more than 2 decades Paul has been crafting some of most lavish and refined wines along the Central Coast. A master at coaxing all of the perfumed aromatics of his Chardonnay, Pinot Noir and Rhône productions, his true talent lies in putting those genies back into the bottle on the palate, combining the decadence of the grape on the nose with the quiet power of site in the glass. A master.
