This brand-new winery that specializes in Sta. Rita Hills Chardonnay is owned by Nikki Pallesen (who was associated with Liquid Farm some years ago). She handcrafts this wine from vines that are almost 50 years old from “Top of the Hill” Vineyard (formerly known as Hilltop.) This Chablis-like chardonnay, which only sees a kiss of new French Oak, has a spine of racy acidity that creates a mouthwatering frame for the finely meshed notes of juicy citrus, crunchy pear, minerals and saline. The finish is mouth-coating, with layers of lime and a dollop of cream.
