"The 2021 Champagne Blanc de Blancs Les Grandes Crayères Extra Brut is made without malolactic fermentation and without filtration. Dosage is two grams per liter. A bright but pale yellow hue, I love the nose, which shows off a refined and elegant profile of lemon sorbet, chalky earth, white flowers, and fresh bread dough. The palate is medium-bodied, crisp, and tension-packed, with underlying notes of lemon oils, pastry cream, and oyster shells. Oceanic and bright, with a zesty profile all around, for me, the oak is not evident in the aromatics here, but rather in the texture, and I imagine it will develop a soft suppleness over time.
