"From my experience of tasting the finest wines from around the world, all the greatest wines possess authenticity, harmony, and elegance. These are the qualities I constantly try to capture in my wines. The ultimate goal is to create wines that are seamless and textural with enough structure and balance to complement fine cuisine.

"In order to make wines of the highest caliber, I select unique vineyards that are cared for by talented vineyard managers committed to excellence. I strive to locate and source from not only the best vineyards but the best blocks within each of these vineyards. During the growing season, yields are restricted to achieve maximum concentration of flavor. Harvest is based on physiological ripeness, which changes depending on the vintage characteristics.

"Cellar work is based on minimal intervention, cleanliness and purity of intention. Because every vintage is different, I do not believe in recipes. With due respect to science, I do believe that true artisanal winemaking is based on intuition, sensitivity and passion. Keeping the lots small allows for gentle handling throughout the winemaking process.

"I want my wines to give pleasure and keep your palate interested until the last drop from the bottle – I hope you like them at first sip and love them at the last."

2013 Paul Lato "Kiss Me Again"

A sweet wine that does not sacrifice complexity for pleasure. Jammy and hedonistic yet qualified by the excellence of fruit and attention to balance, calling this a “dessert wine” does not quite do it justice. It’s a singular after-dinner red that still has plenty of underlying support to showcase the unique qualities of the Bien Nacido Vineyard source.

2014 Paul Lato Pinot Noir, Drum Canyon Vineyard

"The Contender"

Paul built his reputation as one of the most sought-after consulting winemakers in the area.  Now under his own label, he is able to showcase his talent just as he wants.  The Drum Canyon property belongs to the very well-known Dierberg winery.  Paul said he was drawn to this vineyard because of its potential for producing a very high-end, concentrated and structured wine.  His parcel is located in the Western section on the steepest slope, graced by a bountiful Southern exposure.  It is planted with Swan and Calera vines originally "imported" from Burgundy by passionate wine guys in their suitcases.  It is a young wine that is already showing outstanding potential.  When first opened, it is a bit shy, but as it breathes, it becomes obvious this is a wine of great pedigree – bright acidity, pure cherry fruit, and nuances of earth and herbs are all wrapped up in a blanket of silk.

2014 Paul Lato Syrah, Larner Vineyard

"Belle de Jour"

Sustainable practices with biodynamic farming methods contribute to the lovely purity of expression in the fruit from Duvarita Vineyard.  Paul’s parcel is comprised of Mount Eden and Calera clones planted on a beautiful, sandy hillside on the outskirts of the property.  This is his first vintage using fruit from Duvarita and while it is already impressive, the potential for this vineyard is limitless.  This wine is a quintessential example of the Burgundy-like Chardonnays that can be made from Sta. Rita Hills with the right expetise.  Elegant minerals combine with rich fruit, held together with smooth oak and a hint of butter and herbs.

2015 Paul Lato Pinot Noir, Solomon Hills Vineyard

A development by the Miller family, founders of Bien Nacido Vineyards, this fine project adds a new level of refinement to this region. Knowing Vineyard Manager Chris Hammell’s enthusiasm and commitment, I was motivated to select this vineyard. From the first few vintages, wines from this vineyard made by other producers have not disappointed. Spread on beautifully even hills, this is the most westerly vineyard in the appellation making it the coolest due to its proximity to the ocean. Notoriously low yielding vines of clones 115, 667, and 777 create a great concentration of balanced flavors. Bright acidity highlighting gentle red fruit aromatics with a hint of chocolate and smokiness. Medium to full-bodied with velvet texture but perfectly delineated. This vineyard has the potential to become the “Grand Cru” of the Santa Barbara County.
